Granola

This granola recipe has been a favorite for as long as I can remember. I kept it for guests when we lived in Florida; it was a fast and delicious breakfast before they headed to the beach or pool. I still like having it on hand for busy or lazy days. It’s great to pack up and take on vacation, and with school just around the corner, it would be an easy morning meal for the kiddos.

Since I had this for my guests for years, I have shared the recipe more than I can count. It’s delicious by the handful, but my favorite way to have this granola is layered with fresh fruit, vanilla yogurt, and honey.

Through the years, I have changed it up from time to time, and it’s always excellent. You can substitute extra virgin olive oil for half the butter or use a variety of nuts, such as almonds and walnuts.

Watch the granola carefully; it can burn quickly! I have done it more than I care to share, and burnt granola is only suitable for the trash.

Ingredients

  • 5 cups old fashioned oats
  • 1 cup pecans broken
  • 1/2 cup packed brown sugar
  • 1 1/2 teaspoon ground nutmeg
  • 1/3 cup maple syrup
  • 1 cup butter

Instructions

  • Preheat oven to 350℉.
  • Mix the oats, nuts, brown sugar and spices in a large bowl.
  • In a sauce pan add the maple syrup and butter and heat gently, until butter melts. Pour the mixture over the oat mixture and toss to mix well.
  • Spread mixture in a buttered 10 x 15-inch baking pan. Bake until golden brown, about 20-30 minutes. Set timer every 10 minutes to stir granola for even browning. Let cool in pan.
    Store in airtight container.
