Sauce your Sandwich!

Sandwiches mean so much more than ham and cheese or PB&J! Honestly, I never really cared for sandwiches much until I discovered there are many components to a sandwich that make it great. You need the right bread, and not all sandwiches need the same, some are even better in a wrap! Different sandwiches require different toppings; lettuce and tomato do not work well on everything. Grilled, toasted, and the list goes on. Let’s not forget the most important thing, the sauce makes the sandwich!
 
You might say that I take the sauce thing a bit far. Not only does sauce go on my sandwich, but I need extra on the side for dipping!
 
Today I am sharing three of my favorite sauces with you, starting with Tartar Sauce. You may think that is pretty basic. It is simple but far from basic! Tartar sauce is a must on a Po’Boy or any of fish sandwich. Not just any tartar sauce will do. Please do not give me any of that sauce in a bottle!  Also, mixing a little mayonnaise with sweet pickle relish and maybe a bit of onion is NOT a proper tartar sauce. This sauce has the perfect balance of flavors and it enhances any fish sandwich! Be sure to make it a couple of hours before serving.
 
The second sauce I want to share with you is Safari Sauce. This sauce is slap ya mama delicious! Serve this sauce with a grilled (or fried) chicken sandwich, and you have got yourself a party! I even like adding a little bacon to this sandwich. Again, for the best flavor, make a few hours ahead of time.
 
Last, but certainly not least, is Chipotle Mayonnaise. Chipotle peppers in adobo sauce happens to be one of my favorite flavors! This mayonnaise is the bomb, and I could eat it on just about anything—this from the gal that hated mayonnaise for years. Spread this on any fish or chicken sandwich, and you will be happy. If you really want to go to flavortown, try this on a BLT!

Tartar Sauce

Ingredients

  • 1 cup mayonnaise
  • 3 tablespoons finely minced onion
  • 2 tablespoons finely chopped bread and butter pickles
  • 1 teaspoon juice from bread and butter pickles
  • 1 tablespoon shredded and chopped carrots (about the size of rice)
  • 1 tablespoon granulated sugar

Instructions

  • In a small bowl combine all ingredients. Cover and refrigerate for a few hours before serving.

 

Safari Sauce

Ingredients

  • 1 (8-oz.) jar mango chutney
  • 1 cup mayonnaise
  • 1/2 cup prepared mustard
  • 1/2 cup honey
  • 2 teaspoons curry powder
  • dash hot sauce

Instructions

  • In a small bowl, combine all ingredients and store in refrigerator.

Chipotle Mayonnaise

Ingredients

  • 1 cup mayonnaise
  • 3-4 chopped chipotle peppers with adobo sauce
  • pinch kosher salt
  • 1/2 lime, juiced

Instructions

  • Combine all ingredients. Taste for flavor and refrigerate at least one hour before serving.

Notes

If you want all the flavor and very little heat, remove the seed from the chipotle peppers before chopping them.
