Aunt Cat’s Polish Balls (aka Mexican Wedding Cookies)

 

The holidays are all about family, and these cookies come from another one of my favorite aunts. These melt in your mouth cookies, known by many names, have always been high on my list of favorites. They are so wonderfully delicious that I suppose every country wanted to tag themselves on the recipe. I go with Polish Balls since that’s what my Aunt Cat called them.

Polish Balls are super easy to prepare, with only five ingredients. There are different versions of this recipe. If you search the internet, you will find variations that include ground cinnamon, cocoa, lemon extract, or some even roll the dough around a Hershey’s kiss. In my opinion, you do not mess with perfection. I prefer these five simple ingredients.

Aunt Cat's Polish Balls

Ingredients

  • 2 cups unsalted butter
  • 1 cup powdered sugar plus additional to roll the baked cookies in
  • 2 teaspoons vanilla extract
  • 4 cups all-purpose flour
  • 2 cups finely chopped pecans

Instructions

  • Preheat oven to 350℉. Line a cookie sheet with parchment paper, set aside.
  • Finely chop pecans in a food processor.
  • Combine butter, 1/2 cup powdered sugar, vanilla extract, and flour.
  • Add chopped pecans and mix.
  • Roll dough into 1-inch balls and place on prepared cookie sheet.
  • Bake at 350 degrees for approximately 10 minutes, or until set, but not brown.
  • Remove to cooling rack to cool slightly. While still warm roll in powdered sugar and return to cooling rack to cool completely.
  • When completely cool, roll in powdered sugar again.
  • Store in airtight container.
