Nutella Amaretto Fudge

Our Thanksgiving “week” was extra special this year. The older I get, the more I realize what I am most thankful for. And that would be the people in my life. This year may mean a little more since I greatly miss my mother. Furthermore, my dad has been gone 19 years, but somehow without mama, I seem to be missing him more.

It’s funny how one child can bring so much joy, though. Greg and I have indeed turned into silly grandparents. Everything our grandson does makes us giddy. Of course, Thanksgiving was even more special, with him running around the house this year.

Making Christmas candy has always been a big part of my season. It is something that mama always did and a tradition I continue today. It makes a delicious homemade gift for friends and family and is a fun addition to any holiday dessert table. I make a variety of candies throughout the season, but fudge is always on the list.

Nutella Amaretto Fudge is new to me this year. It is super creamy and has a wonderfully unique flavor. Amazon is an excellent resource for amaretto extract and vanilla paste.

To keep fudge at its freshest, layer the fudge using waxed paper. Store in an airtight container for 1-2 weeks in a cool, dry area. Fudge will last in the fridge for 3-4 weeks, or you can store it in the freezer for 2-3 months or longer. For freezer storage, wrap the fudge in waxed paper and then in plastic wrap or aluminum foil. Store the wrapped fudge in an airtight container or freezer bag. When ready to enjoy, remove the fudge from the freezer to thaw at room temperature for 2-3 hours.

Ingredients

  • Nutella Layer:
  • 1 can sweetened condensed milk
  • 2 cups semi-sweet chocolate chips
  • 1 cup Nutella
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon fine sea salt
  • Amaretto Layer:
  • 1 can sweetened condensed milk
  • 1 teaspoon vanilla bean paste
  • 1 1/2 teaspoons amaretto extract
  • 4 cups white chocolate chips
  • 3 tablespoons unsalted butter

Instructions

  • Grease a 10.5" x 6.25" baking pan with butter. Cut a piece of parchment paper to fit in bottom and up two opposing 10.5" sides of pan, leaving overhang to assist in removing from pan. Cut a second piece of parchment paper to fit in bottom and up the other two opposing sides of pan.
  • In a large microwavable bowl, combine milk, chips, Nutella, butter and salt.
  • Cook in microwave on high for 1 minute. Allow to rest in microwave for 1 full minute, then stir for 1 minute. If chocolate chips are not completely melted microwave for 30 seconds and stir for 1 minute again. Repeat process until the mixture is smooth and silky. Pour into the prepared pan and using a spatula, spread to edges and corners of pan.
  • In a large microwavable bowl, combine the milk, vanilla paste, amaretto flavor, chips and butter.
  • Microwave as before. When smooth, pour over the Nutella layer.
  • Using a skewer or chopstick, swirl the fudge.
  • Refrigerate for at least 3 hours before removing from pan and cutting into 1" serving size pieces.
