Peppermint Snowball Cookies

Do you ever wonder why we associate cookies with Christmas? As children, we left cookies for Santa. As adults, we bake and decorate cookies by the dozens. Who can look at a gingerbread cookie without thinking of Christmas?

I’m not sure how the tradition started, but I’m delighted that it did! I enjoy baking, sharing, and eating them. When my kids were growing up, Christmas Eve was never complete until the kids were in the kitchen with me, baking extra special cookies for Santa. To continue that tradition, I found out recently that Greg and I will become grandparents in 2021! I will be baking Christmas cookies with a new little one in just a few years!

These Peppermint Snowball Cookies are new to me this year. They are delicious and a little bit addicting, as you can not stop with just one! They are easy, festive, and the perfect addition to any Christmas party or the perfect gift for someone special!

Peppermint Snowball Cookies

Ingredients

  • 1 cup unsalted butter softened
  • 2/3 cup powdered sugar
  • 2 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon peppermint extract
  • red or pink food coloring
  • powdered sugar for coating

Instructions

  • Beat butter and powdered sugar until light and fluffy.
  • Mix in flour, salt, and extract, just until combined.
  • Cover dough and refrigerate at least 30 minutes.
  • Preheat oven to 350℉. Line baking sheets with parchment paper.
  • Roll dough into 1-inch balls and place on prepared baking sheet.
  • Bake 10 minutes, or until set, but not browned.
  • Remove to a cooling rack to cool slightly. While still warm roll in powdered sugar and return to cooling rack to cool completely.
  • When the cookies have cooled completely, roll in powdered sugar again.
  • Store in an airtight container.
